The oven is the heart. The rest is work counters, cold storage and a proper dough mixer. Here is the whole list.
A pizzeria needs an oven, dough mixer, fridge and freezer, a refrigerated prep counter for pizza toppings, work counters and an extractor fan that can cope. Expect SEK 100,000 to 300,000 for everything, half that if you buy used. An electric oven with stone decks is the most common in Sweden and works brilliantly.
Which oven should you get?
Three choices. All of them can make fantastic pizza. Choose based on your premises, budget and the pizza you want to make.
- Electric oven with stone decks: easiest, most common in Sweden. Needs good power supply in the premises. From SEK 30,000.
- Gas oven: fast and even heat. Requires LPG and an approved installation.
- Wood-fired oven: best feel and flavour, customers love it. Most expensive, requires a chimney and a building permit. From SEK 100,000.

- Dough mixer, at least 20 litres – the dough is too heavy to make by hand every day
- Refrigerated prep counter with GN pans for toppings – you work straight out of it
- Fridge and freezer, ideally two fridges – the dough needs its own space
- Stainless steel work counters
- Dishwasher and sink with a separator
- Pizza peels, dough boxes, pizza boxes
- Cash register approved by Skatteverket
New or used?
Simple rule: anything that cools should have a warranty. Anything made of steel can be bought used. Bankruptcies and closed restaurants sell nearly new equipment for half the price.

Which pizza oven is best for a beginner?
An electric oven with two decks and stone plates. It is easy to manage, needs no chimney and bakes evenly. Just make sure the premises have enough power – the oven draws a lot.
Do I need a wood-fired oven for Neapolitan pizza?
No. Modern electric ovens reach 450–500 degrees and bake a Neapolitan pizza in 90 seconds. A wood-fired oven gives atmosphere and marketing, but the electric oven gives the same result with less work.
How much electricity does a pizza oven use?
A typical double-deck oven draws 10–20 kW when running. You will notice it on the electricity bill. Check that the premises' electrical panel can handle the oven before you buy – sometimes the supply needs upgrading.
