Family can get the pizzeria running. Good staff help it grow. Keep everything fully declared from day one.
An employee costs roughly their wage plus 40 percent. A pizza baker often earns SEK 25,000 to 32,000 a month. You need to register as an employer with Skatteverket, pay tax and employer contributions every month and enter everyone in the staff register, including family.
Before you hire your first person
Four things need to be in place. All of them are quite simple:
- Register as an employer with Skatteverket: free and online
- Get a staff register where everyone working is entered every day, including you and family
- Take out staff insurance and ask your insurer for a restaurant package
- Write employment contracts on paper. Pay, hours, probation. Templates are available on verksamt.se.
Why declared work is worth it
Cash-in-hand wages may look cheap, but they become expensive. Skatteverket checks pizzerias often and the fines are high. Declared employment protects both you and the employee: sick pay, pension and records that count with the Migration Agency and the bank.
- Always pay through the bank, never in cash from the till
- Even family members helping out must be entered in the staff register
- An accountant or payroll system can handle the tax for a few hundred kronor a month

Find and keep good people
The best pizza bakers rarely move jobs through ads. More often you find them through people you know. And they stay where the schedule is fair and wages arrive on time.
- Ask your network first: friends, relatives, the mosque, the church, the association
- Publish schedules at least one week ahead
- Food during the shift is cheap and means a lot
- Train more than one person on each task so you can handle sickness

What does an employee cost per month in total?
Take the wage and add around 40 percent. Someone on SEK 28,000 costs roughly SEK 39,000 once employer contributions and holiday pay are included. The pizzas need to pay for that, so do the maths before you hire.
Can I employ family members?
Yes, and it is common. But the same rules apply: enter them in the staff register, pay declared wages through the bank and write contracts. That protects both them and you.
What applies if I hire someone without Swedish citizenship?
They need the right to work in Sweden: a residence permit with work authorisation or EU citizenship. Check it and keep a copy of the decision before they start. That responsibility is yours as the employer.
